Sushi Line Cooks
Cook would be responsible for the daily preparations of all Hidden Fish recipes and menu items as well as play an integral role in the service of restaurant customers.
Tue-Sat Afternoons-Evenings
An ideal candidate would:
Have demonstrable experience in fish butchering, saku, sashimi and nigiri fabrication, and the an ability to produce 50+ high quality sushi rolls an hour. Advanced sushi training could be provided to the right candidate assuming they possess a high level culinary acumen, exceptional knife skills and be experienced in basic fish butchering and preparation.
Be comfortable working in full view of the dining room and customers as well as playing an active role in the steps of service.
Possess a strong sense of organiztion and cleanliness as well as a working knowledge of basic food safety protocols as dictated by the Onondaga County Health department and Food Code.
Be of a “team first” mindset, eager to collaborate, support and elevate themselves and their coworkers.
Prep Cook
Cook would be responsible for preparing all proprietary condiments, garnishes and sauces used in the daily service of the restaurant.
Availability: Tue-Sat Mornings-Afternoons
An ideal candidate would:
Have experience following recipes and calculating batch adjustments based on need.
Posess a strong culinary acumen as well as excellent knife skills.
Be organized fast and efficient in their daily work.
Possess a strong sense of organiztion and cleanliness as well as a working knowledge of basic food safety protocols as dictated by the Onondaga County Health department and Food Code.

Bartender
Bartenders work directly with customers by mixing and serving drink orders. Their responsibilities include verifying age requirements, knowing alcohol pairing and tastes, knowing how to make traditional and classy drinks, processing payments, managing inventory and cleaning bar supplies.
